Over the next few days I’m going to share with you everything that I do with a roast chicken; From salad, sandwiches and toast, with veggies, with yakitori, risotto and stocks. Doing something like a roast chicken keeps everything so versatile for a number of days rather than keeping you eating the same thing over and over again.
If you want to roast up a chicken to be able to make up any or all of these meals too simply;
- Take a large chicken and place into a roasting tin
- Preheat the oven to 180c
- Place some butter or margarine around the skin of the chicken
- Sprinkle on some dried mixed herbs and squeeze with lemon juice
- Cover it with foil and place into the oven for two hours
- Remove the foil and cook for an additional 25 minutes
- Remove from the tray or rest on a cooling rack over the tray and when it finally cools remove the skin and start to carve and break down the chicken
