
I love using leftover chicken for lunches and using my most recent roast chicken.
To start we did the classic chicken and salad sandwich. Loaded with sliced up chicken and a bunch of salad leaves this wholemeal bready combo makes for a great quick throw together lunch or as a lunchbox option. I like adding in a little mayonnaise or garlic aioli.
Another option, yet again using salad, is to simply throw it all into a bowl. For a little additional crunch, bite and acidity I add in some silverskin pickled onions as well as some honey and mustard dressing to give it a bit of additional moisture. This also works super well for taking to your work or out and about as well.
And finally the third option I did is certainly more of a stay at home meal, unless your work office is blessed with a place to do some prep and has a toaster, as it’s toast with avocado and then some of the scraps and dark chicken meat pieces placed on top with a little bit of chilli flakes, pepper and salt as well.
