Roasted Pork (Pulled Pork)

I love roasted pork and the versatility it has but I live by myself so even a small joint ends up creating leftovers for days. The above image is a photo of a different one to the one I used this time around and luckily this time it was a little less mammoth than that; Though it still resulted in three meals and two sandwiches worth.

I usually find myself getting the one best for pulled pork in Lidl as it is usually the cheapest but it stays super moist and tender if you cook it just right and given there are leftovers something like this is better for providing different options.

To provide the lovely crackle top it will usually receive a scorching, drizzle of oil, liberal application of salt, pepper, garlic granules and sometimes some paprika for added colour.

And to make the most of the full piece of pork I recommend saving any fat and juices that come off the pork as this can be used for other parts of recipes down the road.

An example of such a use is on the day of doing the pork I then popped a variety of vegetables into the tray and back into the oven, at various points depending on the cooking time needed, to give them added flavour and a good crisp. To stop it being too fatty or greasy I also then tend to pop everything into a strainer and let it drip into a container to save again.

To stop it from all being roasted vegetables I mixed some up into a stir fry with a different set of vegetables and some fresh egg noodles. You could of course do this with rice instead. I had some pre made chow mein sauce to mix through and along with a dash of my own regular seasonings this kept the pork feeling fresh and super tasty (and also a super quick midweek meal).

But then for my last main meal use of this pork I decided to incorporate some other things I needed to start to use up including some blood pudding in the fridge and some rhubarb from the local festival back in February that I had popped into the freezer to make a.. well sort of stewed rhubarb to be a bit like apple sauce I suppose. With the vegetables here I popped some of that saved fat into the airfryer and added them all time accordingly again. After I was done with this I scraped the rest into the bin (remember to never put excess fat down the drain!).

Next time I find myself with leftover pork I might make myself a curry or perhaps even some sort of pie. What do you tend to do with leftover pork?
