
Ingredients (For One)
- 75g Penne Pasta
- 75g Spicy Chorizo
- One Medium Egg
- 30g Cheddar Cheese, grated (Plus Extra For Serving)
- Cracked Black Pepper
Method
- Get the pasta on to boil as per the packet instructions
- Chop up the chorizo and put it into a frying pan to get nice and crispy
- Meanwhile put the egg into a bowl and grated cheddar cheese. Add some black pepper and then give it all a good mix
- Drain the pasta and return to the pan but keep off the heat
- Mix through the egg mixture until the pasta is well coated and then add the chorizo, including the oils, and give another good mix
- Leave it in the pan for a minute or two
- Serve and top with some more grated cheese
Eating And Storage Tips
This is a super simple put together meal but if you want to add something like sweetcorn or broccoli then you absolutely can as well or opt for a side salad.
If you want to add additional flavouring and seasoning, seen as this is pretty plain apart from the spice in the chorizo and the black pepper, you could go for something like some dried parsley as well.
Thanks to the egg in this recipe the cheese wont go cold and claggy in the same way, if you make extra and leave this for leftovers. Do remember that if you go to reheat this in the microwave, that even though it was gently cooked in the pan, there is a risk that it clumps up and doesn’t exactly become scrambled egg but it may not keep the smooth and silky texture it did originally.
