Fancy Cheese On Toast

Ingredients

  • 10-15g Butter (Salted Is Probably Better)
  • Three Spring Onions, Sliced
  • 1tsp Wholegrain Mustard
  • 50-70g Grated Cheddar Cheeese
  • 1 Egg Yolk
  • Two Slices Of Bread

Method

  1. Put butter in a pan and add spring onions on a medium heat so they can start to simmer and soften down
  2. Preheat a grill (or broiler if you’re from certain parts of the world) to a medium to high heat
  3. Remove the pan from the heat and add in the cheddar cheese, wholegrain mustard and egg yolk and give it all a really good mix
  4. Spread the mixture across two slices of bread and place it under the grill for about five minutes
  5. When the mixture is bubbling and it has gained a little bit of colour serve it up

Eating And Storage Tips

If you want to add extra flavours to this then adding in a dash of beer or Worcestershire sauce would work incredibly well (and this would make it more like a Welsh rarebit as well). If you don’t have wholegrain mustard then you could just use yellow mustard or any kind of mustard you have just remember that depending on the flavour profile you might want to tweak the amounts (and if you go for a sauce it will make the mixture looser).

You could opt for a finishing of fresh chives or if you want to add a little extra to this you could put diced pre-cooked bacon into the cheese mixture, opting for the lower amount of cheese, to add a bit more flavour and protein. You could even just put slices of bacon or chicken on top, with some salad, and then put both cheese on toast slices together to make for an epic gooey cheese toastie.

This is something I probably would recommend whilst eating warm and fresh, especially because it would be a little hard to reheat, but if you like a very different texture then feel free to let it go cold. You do you. I just cannot really recommend it.
