
With a bit of this and a bit of that this chicken pesto pasta dish is incredibly easy to bring together with vibrancy and flavour.
Ingredients (For One)
- Oil
- Small Red Onion, Diced
- Pasta
- 150-200g Chicken Breast, Diced
- Two large Tomatoes, Sliced
- Broccoli Florets
- Garlic Granules
- Black Pepper
- 1/2 Jar Of Pesto
Method
- Heat some oil in a frying pan
- Add red onion and let soften for a few minutes
- Get some pasta cooking
- Add in the chicken and let cook
- When the chicken is about 75% cooked add in the tomato and broccoli
- Add garlic granules, black pepper and pesto and give it all a good mix
- When the chicken is cooked and the broccoli is at the crunch level you enjoy add in drained pasta and give a final mix before serving
Eating And Storage Tips
I used tagliatelle for making this but it will work with a lot of different types of pasta including spaghetti or penne if you want to keep it cheap and cheerful.
If you aren’t a big fan of tomatoes then go for something like red pepper instead. Got mushrooms that need using? Add them sliced up into the pan alongside the onions.
You could add extra pesto in here to make it really intense in colour and flavour but consider the amount of calories in a lot of pesto! If you want to reduce the amount of pesto because of that exact reason then do so and add a small amount (1tbsp) of 0% fat Greek yoghurt instead. This will change the dish a little in terms of the flavour punch of the pesto but it will stay noticeable and give you some added creaminess as well.
