Easy Weeknight Pepper Stir Fry

When you live alone, work full-time and are trying to eat healthy and on a budget not all meals are exciting especially when quietly on a project pantry. So here’s more just a me making a pepper stir fry.

Ingredients

  • Nest Of Rice Vermicelli Noodles
  • 1tbsp Sesame Oil
  • Ginger (1tbsp Lazy Or 1/2 Inch Fresh Grated)
  • Pepper Stir Fry Mix
  • Oyster Sauce (To Your Preference, I Used 3tbsp)

Method

  1. Soak the rice vermicelli noodles in boiling hot water to soften
  2. Put sesame oil in a wok on high heat
  3. Add in ginger
  4. Add in pepper stir fry vegetable mix and let wilt down
  5. Add oyster sauce and mix through
  6. Drain the vermicelli and add into the wok, stirring in quickly
  7. Serve

Eating And Storage Tips

If you don’t have oyster sauce then you can use hoisin or go for a creative blend of soy sauce, sweet chilli sauce and a little Chinese five spice (these flavours don’t replicate the oyster sauce but are a good combination for an alternative for things you might have in the fridge/pantry).

If your local store doesn’t have a pepper mix then use whatever one they do have or simply buy some fresh bell peppers, carrots and maybe some beansprouts too and finely chop the peppers/carrots to do something similar. In fact, as I type this I’ll probably be doing a home blend of vegetable items within the next day or two.

If you want to make more of this up than you need I would suggest doing the vegetable mix and keeping any extra noodles separate. Why? These noodles soak up so much liquid and if you leave them in something like the sauce it wont be so much that the meal goes dry but rather than the noodles will turn to mush. Given how easy it is to soften the noodles you can always make extra fresh, reheat the vegetable mix in the microwave, and mix it in after a few minutes.

This meal was a great one for me as part of my project pantry, though this is actually from back in January so there’s already an update up on that, as it meant I used up a few odds and end bits and managed to get towards using more things up. The only thing I purchased for this meal was the fresh vegetables making this low cost for the week.
