
Cottage pie sounded great until I thought about doing only enough mashed potato for one. So instead I did a cottage pie and hotpot combo and this made it quicker and created less mess!
Ingredients (For One)
- Small Sweet Potato, Sliced
- Spray Oil
- Small Red Onion, Diced
- 80g Mushrooms, Sliced
- Salt, Pepper, Mixed Herbs, Garlic Granules
- 200ml Gravy
- 1tbsp Marmite
- 80g Frozen Sweetcorn
- 80g Frozen Peas
- 200g 5% Beef Mince
Method
- Preheat the oven to 200c
- Lightly oil/spray a frying pan
- Add the onions and mushrooms so they start to soften
- Add salt, pepper, mixed herbs and garlic granules
- When the onions and mushrooms have softened add the beef mince, sweetcorn and peas
- When the mince is cooked add some Marmite and gravy (I put the Marmite into the gravy for easy of combining) and let simmer away for about five minutes
- Transfer to an oven friendly dish
- Top with sweet potato slices
- Pop in the oven for about 30 minutes
Eating And Storage Tips
You can absolutely add extra vegetables to this; Celery or carrots would be classic examples. You could serve it up with broccoli, cauliflower or cabbage on the side too.
If you want to make it even more comforting you could top the sweet potato with a little grated cheddar too. Or you could add that to something like the broccoli or cauliflower too.
And of course if you don’t have sweet potatoes just use regular potatoes or even sliced baby potatoes.
You could easily increase the quantities of this recipe to be able to serve more people or so you have leftovers for another meal. If you’re planning to do it for making leftovers be sure to cover it well or transfer it to a sealable container for the fridge. If you want to make extra up but don’t want to eat it all at once transfer it to a freezer friendly container and you can defrost and reheat it later. Just consider microwaving might make any of the crispy topping go soft again.
