I Tried The Easiest Cheesecake On The Internet

Hint: You probably shouldn’t bother with just the two ingredients and over the next week or two I’ll be discussing how you can enhance it because even the one extra ingredient I added wasn’t really enough.

Ingredients (For One)

  • 250g 0% Fat Greek Yoghurt
  • Four Lotus (Or Own Brand Equal) Biscuits
  • Vanilla Extract
  • Recommended Extras – Fresh Fruit, Fruit Compote, Honey Or Coffee

Method

  1. Put the yoghurt in a fridge friendly, coverable, container
  2. Add in a little vanilla extract (I suggest adding honey, coffee or some fresh fruit or a fruit compote too here if you can)
  3. Squash in your biscuits so that they are generally fully covered
  4. Cover and put in the fridge for 4-6 hours

Eating And Storage Tips

I mentioned it a few times above but this needs a lot of improvements and, honestly, I think compromising between this and a traditional no-bake cheesecake is the way to go. So much so that over the next few weeks I’ll be sharing a way to do exactly that.

But if you do want to do this then use some honey or sugar free syrup to give it more flavour and sweetness than just the vanilla extract I added in. Putting coffee in would add extra flavour or fruit would add extra sweetness (or tartness depending on the fruit) as well as additional texture. Another option would be a small amount of low-calorie drinking chocolate or a swirl of dark chocolate flakes. Yes all these things add extra calories but if they are less calories than a cheesecake but actually make it hit the spot more then that’s still a good compromise.

You could easily make these up in the morning, perhaps when you are making your breakfast, and put them in the fridge for the evening as well. You could almost certainly even make a couple up at once and have it a day or two later as well; Just make sure the container is well sealed and your yoghurt has plenty of life left in it.
