
Ingredients (For Two Quesadillas)
- Two Spring Onions, Sliced
- Two Cheeses (Or More), Grated (I Used Double Gloucester With Chive And Onion And Grana Padano)
- Light Margarine
- Wholemeal Wraps
Method
- Lightly margarine one side of a wrap and place it into a medium to high pre-heated pan
- Add the cheese and spring onion fillings to one half of the wrap before folding over on top of itself to encase the filling
- Let it crisp up on one side, allowing that cheese to melt, before flipping and possibly flipping back again to get it nice and crispy and warm
- Cut in half and repeat the process as needed for more pockets of cheesy goodness
Eating And Storage Tips
The first time I ever made quesadillas I did this combo and have more combos on the way but this time it was just using up leftover Christmas cheese. So if you also have leftover, if there is such a thing, cheese from something like a dinner party or just because you’re a lover of cheese then this is a perfect way to use one or two up.
I went for a stronger flavourful cheese and a harder cheese that whilst also has a lot of flavour is a little different and compliments it well. If you want a more cheese pull then go for something like grated mozzarella or with some cheddar too as well as your flavourful cheese(s).
These are super quick to make so I probably wouldn’t be doing them in advance but you absolutely could and then wrap them in foil and take on the go with you. These would be great cooled too you just wont have that cheese pull. If you have a microwave somewhere you can wrap them in some kitchen roll (paper towel) for a minute just to heat them up and loosen that cheese back up a little but if you’re planning to do this make sure the outside is extra crispy on the outside!
