
Ingredients (For One)
- Spring Onion, Sliced (Separate Whites From Greens)
- Red Chilli, Roughly Chopped
- Pinch Of Lazy Ginger
- Sesame Oil
- 1/2 Red Pepper, Sliced
- 125g Beef Mince
- 1-2tbsp Light Soy Sauce
- Noodles (Udon, Soba Or Egg)
Method
- Put the whites of the spring onion, red chilli and lazy ginger in a pan with a drizzle of sesame oil and allow to cook for a couple of minutes
- Add red pepper, beef mince and soy sauce and let cook until the mince is fully cooking
- Meanwhile cook some noodles and drain
- When the beef is finally cooked add and mix in the noodles
- Serve and top with spring onion greens
Eating And Storage Tips
This is one of those recipes that you can easily increase the amounts for the meat side of the recipe and put it into the fridge to reheat another day. I would suggest for the noodles though to do them as and when you need them just so they don’t dry out too much on reheat or absorb all the liquid of the mince mixture. This would then last 2-3 days in the fridge.
If you have extra time on your hands then you could absolutely leave this to marinate for an hour or six before cooking this and add things in like fresh crushed garlic and something like Chinese five spice too.
