
Ingredients (For One)
- Small Leek, Finely Chopped
- 10g Butter
- 1/2tsp Dried Chilli Flakes
- Salt, Pepper, Smoked Paprika
- 150g Fresh Washed Spinach
- 2 Eggs
- 1-2tbsp 0% Greek Yoghurt
Method
- Place the butter into a pan and allow to melt on a medium heat before adding in the leek
- Add in the dried chilli flakes, giving a mix and let the leek soften down
- Add salt and pepper to the pan to taste before adding the spinach and letting wilt down just a little
- Make room in the pan near the middle and crack in a couple of eggs and let them cook on a low heat. You might want to cover with a lid to ensure the top gets nicely cooked too
- Serve everything up and sprinkle with smoked paprika and put some Greek natural yoghurt over the spinach mix
Eating And Storage Tips
I wouldn’t particularly recommend trying to store this one so just make what you need each time.
I had this for dinner so decided to add a bread roll to the dish as well but you can absolutely have this for breakfast or lunch without the bread. I mean, you can for dinner too but you might want to serve it with something else, preferably more protein perhaps salmon, to stop you from getting hungry later on!
