Cheeky Twist On A Carbonara With Chicken Chipolatas

Ingredients (For One)

  • 3-4 White Mushrooms, Sliced
  • Shallot, Finely Diced
  • Large Garlic Cloves, Finely Chopped
  • Olive Oil
  • Three Chicken Chipolatas, Sliced
  • Tagliatelle
  • Pasta Water
  • 25g Grana Padano, Grated
  • Two Fresh Eggs
  • Chives, Optional

Method

  1. Put the mushrooms, shallot and garlic clove in some olive oil in a frying pan
  2. As the shallot starts to soften add the chipolatas and allow to start cooking and goldening up a little
  3. Meanwhile cook some tagliatelle until just beyond al dente and drain, setting aside a little pasta water
  4. Mix the grana padano and one of the eggs into a bowl
  5. Add the pasta to the sausage pan and remove from the heat
  6. Mix in the egg and cheese mixture to the pan and stir gently until it all becomes well coated
  7. Add in another egg and keep mixing so the residual heat keeps cooking it without scrambling
  8. Serve and top with chive

Eating And Storage Tips

This meal makes me really happy because it allows me to feel like I’m having something a little special but with the chicken chipolatas it keeps the calories down. If you don’t have chicken sausages though then using pork sausages will absolutely work too; If they are thicker then just be sure to cook them for a little longer or perhaps pre-cook them.

If you don’t have tagliatelle then go ahead and use spaghetti or even something like rigatoni or any other pasta that you know will be great at distributing that sauce. I just find that tagliatelle works slightly better because of it having that greater volume to be able to get each bit of it well coated.

If you want to add more green to this then do something like tenderstem broccoli, green beans or a salad on the side. I find that this is one of the meals where adding in fewer ingredients to the actual dish really enhances it and it’s better to then just have things on the side. If you want to really bulk this out with extra carbs then serve a slice or two of garlic bread on the side.
