
Ingredients
- Pre-Rolled Puff Pastry
- BBQ Sauce
- Mushrooms, Sliced
- Cooked Beetroot, Sliced
- Spring Onions, Sliced
- Grana Padano, Grated
- Low Fat Mature Cheese, Grated
Method
- Preheat the oven to 200c
- Lay puff pastry flat on a baking tray and drizzle with BBQ sauce
- Add mushrooms, beetroot and spring onions
- Top with grana padano and cheese
- Place it into the oven for about 25 minutes
- Remove from the oven and pull apart the flaky pastry to devour piece by piece
Eating And Storage Tips
This is a fantastic thing to make up and split into portions for a few ready to go lunches, especially given it works so well cold too.
You absolutely can add a few extra steps to this or change ingredients around a little. If you want to take the time you can mix some BBQ sauce with a little tomato puree and a dash of water and spread it over the pastry more smoothly.
If you don’t have the ingredients for topping that I used then something like pepper, tomatoes, and even things like asparagus would work fantastically! I probably wouldn’t consider putting tomato and beetroot on together as that might make it a little too soggy.
You can absolutely use just one type of cheese for this or instead go for something like grated mozzarella. If you want to make it more cheesy grate the grana padano heavily across the entire pastry base on both sides.
