
Ingredients
- Chicken Breast
- Salt, Black pepper
- One Lime, Juice And Zest
- Olive Oil
- 1 Heaped tbsp Smooth Natural Peanut Butter
- Dash Of Coconut Water
- Two Garlic Cloves, Pressed
Method
- Score the chicken breast and season with a generous amount of salt, black pepper, and the zest from half a lime as well as drizzling with a little olive oil before turning over and placing in the oven
- Meanwhile, put juice of the whole lime into a bowl with the natural peanut butter, coconut water and garlic and give it all a good mix
- After about ten minutes pop the chicken out the oven, turn it over and coat in the peanut butter mixture before promptly returning to the oven until fully cooked
Eating And Storage Tips
I served mine with egg noodles and asparagus but you could easily do this with something like coconut and coriander rice and broccoli. For added colour and a flavour pop top with fresh red chilli and fresh coriander too.
This would be brilliant as leftovers; Sliced up and tossed into a salad with a little satay sauce to combine it all together. Alternatively you could just chop half of it up and put it with some rice and reheat it the following day as well.
Want to enhance the dish I did? You could easily slice this up and serve it on top of ramen with a small egg as well.
This entire dish is so simple and involves purchasing so few ingredients and the ones you might need to purchase, such as the lime, are generally affordable as well. This was so low effort that combined with the flavours made it really enjoyable and has absolutely become one of my favourite go to chicken dishes now.
