A Simple But Saucy Salmon Tagliatelle

Ingredients (For One)

  • Tagliatelle (I Used Bronze But Just Use What You Have)
  • Cooked Pasta Water
  • Olive Oil
  • Two Cloves Garlic, Crushed
  • Salmon Fillet
  • Lemon Juice (Fresh Or Concentrate)
  • 40g Reduced Fat Soft/Cream Cheese
  • 60g Reduced Fat Crème Fraiche
  • Salt, Pepper, Dried Dill (Or Oregano)
  • 25g Grana Padano, Grated

Method

  1. Cook up the tagliatelle as per the instructions and reserve a little pasta water
  2. Add a dash of oil to a large frying pan and place in the garlic and salmon
  3. After flipping the salmon add in some lemon juice, soft/cream cheese, crème fraiche, salt, pepper, dried dill/oregano and a small ladle of that pasta water
  4. After giving it a mix add in the Grana Padano and give a mix before leaving to simmer for a couple of minutes
  5. Add the tagliatelle, break up the salmon, mix together and serve

Eating And Storage Tips

Serve this with some steamed broccoli or green beans on the side or right at the end mix through something like some spinach to give it a little extra colour too. If you don’t want to cook more things then a side salad will work well too, especially if you’re trying this in slightly warmer months.

I only add in a little lemon juice but you could easily add more, or if using a fresh lemon, finish the dish off with another fresh squeeze or some grated lemon zest on top.

My local store didn’t have any parmesan so I used Grana Padano instead but use whatever hard cheese like these you can get your hands on. If you want to add more flavours to the dish you could also use a herb and garlic soft/cream cheese as well or if you’re a fan of blue cheese crumble that on top.

This can be reheated but if you are planning to do that make sure your pasta is very much on the al dente side of cooked and try to reheat it on a lower heat for longer to not cause the dairy products to either split or congeal in a gross way. It’s also worth considering keeping the rest of the salmon separate if you are planning to reheat it just to try prevent it from overcooking and it will work well mixed back through cold as well.
