
Ingredients
- Sweet Potato, Cubed
- Mushrooms, Sliced
- Black Pepper, Salt, Mixed Herbs, Paprika
- Sprouts, Halved
- Sausages
- Oil
- BBQ Sauce
Method
- Place the sweet potato in a large oven friendly frying pan with some oil
- Add the mushroom, black pepper, salt, mixed herbs and paprika and give a good mix
- Add the sprouts and continue to let everything soften and gain some colour
- Add some sausages to the pan, so they come into contact with the base of it, and transfer to a 180c oven until the sausages are cooked
- Serve and drizzle with optional BBQ sauce
Eating And Storage Tips
I use pork sausages but this will absolutely work with any type of meat or meat-free sausage of your choosing. You could even use outright chicken or normal pork here instead. If using chicken I’d also recommend a little cheddar cheese melted through.
Normal potatoes or other vegetables would work here as well. You could bulk the mixture out more with carrots, parsnips or green beans. I like going for something like sprouts for that extra depth of flavour and how long they maintain a bit of crunch for.
If you’re not the biggest fan of BBQ sauce then absolutely replace it with something else instead. I chose it because the sweetness and little smoky kick goes quite well with the sausages I used but you could go for a ketchup, chilli jam or something completely different depending on the sausages and vegetable combination you are doing.
