
Ingredients
- Potatoes, Thinly Sliced
- Sprouts, Thinly Sliced
- Garlic, Finely Chopped
- Onion, Diced
- Mixed Herbs, Salt, Black Pepper, Cayenne Pepper
- Pork Sausages, Chopped
- Baby Plum Tomatoes, Sliced
- Feta, Cubed
Method
- Parboil the potatoes, remaining to drain them and set aside, whilst preheating the oven at 200c
- Place the sprouts, onion and garlic into an oven friendly frying pan
- When they start to soften add in the mixed herbs, salt, black pepper and cayenne pepper and the potatoes to the frying pan as well as the pork sausages
- Cover with a lid for about five minutes before adding in the baby plum tomatoes and feta and place it into the oven for about 15 minutes
Eating And Storage Tips
Whether you want this for leftovers depends on if you either like cold potato or are okay with the feta fading away slightly during the reheating. I absolutely loved reheating some of this but it did mean that some of the crisped up exterior of things like the potato obviously became a little softer too.
I used pork sausages for this but honestly vegan, vegetarian or some other meat sausages would absolutely work as well. You could even remove the sausages completely and choose a different meat such as chicken for this. If you want the sausages to have extra colour then you might want to cook them up a bit first before cooking them but doing it with my method does get them fully cooked too.
