
Ingredients
- 1/2 White Onion, Diced
- Three Large Closed Cup Mushrooms, Sliced
- A Medium Carrot, Slices Quartered
- Green Beans, Quartered
- Chicken Breast, Sliced
- Mixed Herbs, Pepper, Garlic Granules, Salt
- 100g Feta
- 50ml Semi-Skimmed Milk
- Oil
Method
- Put some onion, mushroom, carrot and green beans into a large frying pan along with some oil to start softening up before adding in the chicken
- Add the mixed herbs, pepper, garlic granules and salt and give it all a good mix and let that chicken cook
- As the chicken is just and just cooked, reduce the heat to low, add in the feta and some semi-skimmed milk and give it a good mix to let that cheese start to melt into the dish
- As it all starts to melt and become combined you can turn the heat to a medium-low for a while and it will get nice and bubbly with that sauce thickening slightly
- Simply serve it all up
Eating And Storage Tips
You can absolutely reduce the quantities of all of this here and do it with something like some rice or pasta on the side or mixed through as well or keep it as this amount and have leftovers or a meal for a couple of people. The day I cooked this I had hardly eaten and my chicken breast was huge (I’m talking nearly 300g) so I went for the 900kcal meal with this by itself instead.
Due to the dairy products this cools in a bit of a funny way and it also makes it a bit hard to reheat without them splitting so if you are going to do this I would suggest starting it on a lower temperature in the microwave and as it starts to heat giving it a mix before turning the heat to max and finishing blasting it. Alternatively just pop it into a pan to reheat.
You can chop and change the vegetables to your preference too. Some bell pepper or broccoli would work well in here. I’d always recommend going for something that is a bit softer when cooked like mushroom or pepper and combining it with something that maintains a bit of a crunch like carrot or broccoli for textural differences.
If you happen to have some pastry around as well you could always reduce the liquid further and turn this into the creamy filling for a pie! If you choose to do that consider chopping up the vegetables a bit smaller and perhaps adding something like pies in as well.
