Roasted Curried Chickpea Snack

Ingredients

  • Tin Of Chickpeas
  • Olive Oil
  • Paprika
  • Ground Coriander
  • Curry Powder

Method

  1. Preheat an oven to 200c
  2. Drain and dab dry the chickpeas before adding to a bowl. You can rinse them if you want as well
  3. Add olive oil, pepper, paprika, ground coriander and curry powder and give a good mix
  4. Place onto a baking paper lined tray and spread out
  5. Place into the oven for 35-45 minutes but if you want extra crunch you can easily either crank the heat up or the cooking time

Eating And Storage Tips

These lasted really well in the fridge for three to four days but as I didn’t crunch them up quite as much as I could have done they certainly gained a little softness as they cooled and sat around (which was still delicious too)

You can completely mix the seasonings up for these too. I went for a more curried route but you could do things to give them a more fresh taste such as lemon and garlic too or more of a punch with something like chilli and ginger.
