Rocky Cornflake Bites, A Take On A Childhood Classic

Ingredients

  • 400g Chocolate
  • Cornflakes
  • Maltesers
  • Glace Cherries, Halved
  • Mini Marshmallows
  • 100g White Chocolate Chips

Method

  1. Melt up some chocolate in a large glass bowl, I did mine over a bowl of medium heat simmering water
  2. Turn the heat off for the water but keep the bowl on the pan. Add in cornflakes, Maltesers, glace cherries and marshmallows and give a good mix
  3. Remove the bowl and place the mixture in a large dish spreading it around evenly
  4. Top with white chocolate chips and place in the fridge to set
  5. Remove from the fridge after about an hour, allow to come to room temp for 5-10 minutes, cut into pieces and place into sealed container

Eating And Storage Tips

This has a fairly solid shelf life, given none of the ingredients came from the fridge anyway, and I found that they lasted a week comfortably. I made 15 pieces from this and gave a few to my Mum and her partner. A traditional rocky road mixture also has butter in to help give the chocolate that extra glossy feel but I find that for this cornflake cake and rocky road combination that isn’t needed. If you do mix butter through consider that being an ingredient, that depending on the heat of the kitchen or place you store it, can turn quicker or simply start to melt with the chocolate too!

One piece was just under 250kcal so that’s certainly something to keep in mind! You could use all dark chocolate to reduce things slightly, swap out a few ingredients for slightly lower calorie options as well; Perhaps a small amount of dried fruit or there are brands that do things like Maltesers but lower in numbers. I do feel though that if you’re making this either for yourself, your household or perhaps a small gathering you might not be caring too much how much a single piece is (and if you eat balanced throughout the day this shouldn’t ruin your aims!).
