
Ingredients (For One)
- One Medium Carrot, Diced
- One Medium To Large Sweet Potato, Diced
- Olive Oil
- Small Bell Pepper, Diced
- 125g Chorizo, Thick Slices Quartered
- Two Eggs
Method
- Place carrots and sweet potato in some heated olive oil in a large frying pan and allow to start softening
- When they soften a little, so they are soft on the outside but still have a little resistance on the inside, add in some bell pepper and chorizo and continue to leave to cook
- Serve up the mixture and fry up some eggs in the chorizo oils before placing on top
Eating And Storage Tips
I tried to use a green bell pepper to contrast the redder and more orange shades of the chorizo, carrot and sweet potato but if you still want to make it more varied colours you could add some courgette or even some quartered pan-fried sprout too.
My eggs were getting a little bit old so they did split as I was cracking them into the pan; This dish is naturally better with a really golden yolk that is nice and runny but this still works for a nice bit of extra protein.
If you want to try to reduce the fat and oil content, especially from what comes out of the chorizo, you can always dab the pan down a little bit before serving and choose a different method of cooking your fried eggs. Chorizo is naturally pretty high in fat but some is higher fat content than others so if this is something you want to keep an eye on then compare the ingredients and contents when buying them! I went for probably a double serving of chorizo so you can easily half this to about 75g per portion and just add in extra vegetables.
Naturally, I would avoid making up more eggs than what you need. The rest of it can very easily be volumed up and put into tupperware and placed into the fridge though. You could easily get away with eating this cold but I would personally reheat it; The microwave works decently enough but if you have a bit of extra time or the right setting opt for a frying pan or even the airfryer. If you took your chorizo and vegetables to a crispy level just note that the microwave might create steam and soften things down a bit but if this doesn’t bother you go for microwaving in a plastic free container.
