
Ingredients (For Six Large Muffins)
- Three Bananas, Mashed
- 1/2 Granulated Sugar
- One Beaten Egg
- 100g Melted Butter (I used Margarine)
- 1 1/2 Cups Self Raising Flour
- Baking Powder, A Dash (Probably A Teaspoon)
- Vanilla Extract, A Cap Full
- Dark Chocolate Chips, I Used A Small Bag Approx 100g
Method
- Preheat your oven at 190c (375f)
- Add the bananas, sugar and egg into a bowl and mix well
- Add the margarine/melted butter and mix well again
- Add in the self raising flour and baking powder and fold everything together well until it’s smooth apart from any chunks of banana
- Add in a splash of vanilla extract and a small bag of dark chocolate chips and give a final mix through
- Place the mixture into cake or muffin cases, I used some silicone muffin cases in a large six case tray, and bake for approx 30-35 minutes using a skewer to check they are cooked before removing (if you see goo check if it’s cake mix or just banana!)
- Leave in the cases for a couple of minutes before removing to allow to cool quicker on a rack (I just use a spare oven rack)
Eating And Storage Tips
I made these one afternoon after work and had one fresh out the oven when it was warm and the chocolate was all gooey still. The rest I had cold for breakfasts for the following five days and they were just as delicious just with a different more “set” texture.
If you want to reheat these you absolutely can pop them into the microwave for a few seconds just to get them releasing moisture and melt that chocolate a little bit. I do this more if I’ve made banana bread as a loaf and want to spread something on a slice.
If you want to make these a bit fancier you can place a whole slice of banana on the top of the uncooked cake mixture in each case and sprinkle it with a little sugar but I find this is only good if you will be eating them all within a couple of days.
Should you find yourself out of self raising flour you can absolutely use plain flour but be sure to add in extra baking powder and a bit of baking soda too to make sure it doesn’t fall short of your fluffy rising expectations.
