
Ingredients (For Two)
- Two Boneless Pork Loin Steaks, Sliced
- Fresh Broccoli Florets
- Curry Powder Blend
- Coconut Milk, Small Tin
- Peanut Butter, Crunchy
- (Oil, I Use Sesame But Just Use Whatever You Have)
- (Plus Rice Or Some Other Side)
Method
- Put the pork into a frying pan with the broccoli and sesame oil on a high heat
- When the pork is just cooked add in a curry powder blend (I went for a medium one)
- Add the coconut milk and some crunchy peanut butter, I did approximately two heaped tablespoons and give it all a good mix through and reduce the heat to a medium low
- Allow to simmer down and do some rice, or any sides you might want, whilst you wait (I did coconut rice) before serving it all up
Eating And Storage Tips
As you probably know by now I live by myself so this was done with the exact idea of having leftovers for the following day. I could very easily have done a single amount but given I was already using a small tin of coconut milk I would then have had to figure out what to do with the other half so it made sense to make up extra. I gave mine a good blast through in the microwave, giving it a few good mixes before and during to keep all the sauce elements well combined, and did some fresh rice to do with it.
If you don’t want broccoli or want to add extra ingredients to this you could go for some diced carrot, sliced bell pepper or green beans chopped up nice and small.
Find curry powder blend isn’t enough flavour you can obviously add ginger, garlic and a bit of fresh chilli as well. When I am doing a more complex version I know that I do but I find this version to just be fantastic for a super simple speedy and low thought energy recipe.
For that bit of texture I tend to go for crunchy peanut butter but if you have a smooth one or one of the natural runny ones then that’s absolutely going to work just as well. If it’s a more runny one consider adding in a bit of cornflour slurry to thicken it all up a little or take longer letting it simmer down to thicken it that way (or just accept a more loose sauce). If you aren’t keen on peanut butter but like other similar options I can imagine a cashew butter would also work incredibly well.
