Haddock And Leek Risotto

Ingredients

  • Leeks, Well Washed And Sliced
  • Olive Oil
  • Arborio (Risotto) Rice
  • Vegetable Stock (Made Up/Heated Through)
  • Smoked Haddock (I Used Some From Frozen I Can Microwave To Cook)
  • Seasonings

Method

  1. Place the leek in a large pan with some olive oil and start to cook down until going soft on a medium to high heat
  2. Add some rice in the same pan and after giving it a good mix and allowing it to toast for about 30 seconds add a dash of vegetable stock as well as any additional seasonings you want and drop the heat to medium
  3. Keep adding the stock bit by bit until it is all absorbed and the rice is just cooked through (this is important because we still have some more steps to go and we don’t want it to overcook)
  4. I use frozen haddock that I can microwave from frozen so I just cook this for a few minutes whilst the risotto is in that final stage of cooking but you can always cook fresh when the risotto is earlier in the cooking stages
  5. Roughly chop the haddock up, making sure you will retain some bigger chunks but some smaller flakes too, and put it into the risotto before stirring and cooking for the final couple of minutes

Eating And Storage Tips

This risotto actually tastes fantastic the next day and the texture holds up fantastically. When I had a small amount as leftovers I just kept it cold because I was nervous about the idea of reheating several elements in here but I imagine if you’re feeling braver that reheating it would be okay too.

People have a thing against fish and cheese but in this case, with it being a smoked haddock, a small grating of fresh parmesan either to mix through at the end of cooking or put across the top of this dish would work amazingly.

I will happily be the first to admit that the leeks lose vibrancy throughout the cooking of this dish so if you want to make it look fresher and also give it a bit of a bite you can add in some peas right at the end to just get them cooked through; If I didn’t find that I react to peas the same way as I do beans because of legume allergies (and peas make me feel sick which is probably why as I child I thought peas were icky) I would have done this.
