
Ingredients (For Two)
- One Medium Potato, Cubed Small
- Onion, Diced
- Corned Beef, 1/2 Tin Cubed
- Pepper, Salt, Mixed Herbs
- Fried Egg (Optional)
Method
- Parboil the potatoes whilst heating up a frying pan
- Drain the potato and place into the frying pan, adding some onion and the corned beef too
- Add in some seasoning and leave on a medium heat for things to cook up, stirring occasionally but not too much
- Serve. Top with a fried egg if you’re feeling fancy and have more time to spare!
Eating And Storage Tips
I make enough for two breakfasts because if I’m doing this effort in the morning you’ll be damned wrong if you think I’m only making enough for one and besides you’d have to locate such a small potato for that and find more things to use with the leftover corned beef (a recipe on that is to come and you might be able to view it already here)!
Place your leftovers into a container and allow to cool down. If you’re leaving the house and you can’t wait around put it into a container with one of those steam vent lids and let cool as much as possible before throwing that on and keeping the vent open in the fridge and when you get home closing the vent again. This can easily stay in the fridge for a couple of days so you could also make a much bigger amount up and have it on repeat for a few days or make it for more people.
If you want to add a bit more nutrition in here or added flavours you can either add mushrooms, tomatoes or even finely diced bell pepper in there depending on your breakfast flavour profile. I prefer to keep it simple with a healthy dose of seasoning and just a fried egg or something with it. You could even do scrambled egg and mix it through afterwards as well; I wouldn’t suggest doing it at the same time as it might mess with the texture of both of them.
