Oat Loaded Pancakes

Ingredients

  • Oats, I just Use Basic Porridge Rolled Oats. I used half the recommended portion size per serving.
  • Milk, Your Preference, I Used Semi Skimmed. About 100ml
  • Honey, A Runny One Works Better Than A Set Honey. The amount is based on your sweetness preference
  • An Egg, Whole
  • Plain/All-Purpose Flour. 30g but have spare to hand in case you need to thicken it more.

Method

  1. Soak some oats in milk for 5-10 minutes.
  2. Add the honey, this will depend on your sweetness preference but you can also add actual sugar if you want a more obvious sweet punch
  3. Add in an egg and mix it all together well
  4. Add in some plain/all-purpose flour and give it another good mix
  5. If you don’t have the right thickness add more milk to loosen or flour to thicken before placing it in the fridge for 5-10 minutes
  6. Turn the heat up for a pan before adding the mixture making sure it coats the pan evenly and is a good thickness for your preference
  7. Turning once or twice to ensure it’s cooked to your preference before serving. I usually get two to three pancakes out of this mixture for one hearty person’s portion

Eating And Storage Tips

As these are actually pretty sturdy for a pancake you can leave these to cool and cover them for the fridge to reheat them in a pan later but if you do this add a little butter to the pan to stop them burning at a high heat.

If you aren’t planning to have all the mixture at once, or want to get yourself prepared, you can easily make the mixture up a day in advance and leave it in the fridge to cook the next day just be sure to give it a good mix through to do this and see if you need to add any more milk in (I find it thickens a bit the longer it’s left).

If you want to add more things into this you can add something like blueberries or even grated and squeezed out apples but I would personally rather top them with something like a bit of Greek yoghurt and fresh fruit. Even when I did this without added fruit and such I found it kept me going through until lunch time so if you add more prepare to be loaded up for a full day of being on the go!
