
Ingredients
- Sausages, Cooked And Sliced
- Potato, Sliced And Parboiled
- Small Tomatoes
- Broccoli Florets And Stalk Sliced
- Bell Pepper, Sliced
- Onion, Diced
- Oil For Cooking
- A Lot Of Eggs
- Mozzarella, Sliced
- Mixed Herbs, Pepper, Seasonings To Preference
Method
- If you are using fresh potato or fresh sausages be sure to parboil and cook them here and use this time to do any vegetable preparation required too. If you’re doing this in advance you can put it all into a container in the fridge until you’re ready to go
- When ready to cook pre-heat the oven to 220c before adding some oil to a large oven safe frying pan on a medium-high heat and add in the potatoes, vegetables, tomatoes and sausages
- Whisk up some eggs, adding in your seasonings to this mix, and add this to the pan allowing it to start cooking
- When the bottom is cooked and the heat is rising through the mixture top with mozzarella and move the pan to the oven until the egg is fully cooked and the mozzarella is melted and going golden
Eating And Storage Tips
I had half of this for dinner one evening and then had the other half split across two breakfasts. If you want to make this mixture for breakfast you can do it in something more like a square oven dish and cook it that way throughout (it takes longer) and then cut it into smaller bites. Another option is to do them in something like muffin trays so you can pop one or two into the microwave to reheat at the start of your day.
Whilst I put sausage in here you could easily put bacon in as an alternative or even a combination of both. If you don’t want pork products alternative types of sausage will of course work fantastically here and in fact something like a chicken or turkey sausage would reduce fat and up protein a little too. You could put mushrooms in there too, instead of broccoli, if you’re going for an even more cooked breakfast in a frittata sort of vibe. If you want more greens consider something like spinach mixed into the egg mixture to add there (not sooner or it will mush too much).
