Ingredients

• Soba Noodles
• Sesame Oil
• Pork Loin Steak, Chopped
• Broccoli Florets
• Red Pepper, Chopped
• Ginger, Grated (Or Lazy Ginger)
• Stir Fry Sauce (I Used Chow Mein)

Method

1. Put some noodles on to cook, draining them when they are just cooked
2. Place some sesame oil and chopped pork loin in a large frying pan on a high heat
3. Add to the pork pan, when the pork has just cooked through, fresh broccoli florets, red pepper and ginger letting it continue to cook for another two to three minutes remaining on a high heat
4. Add in a stir fry style sauce of your choosing (I went for a chow mein one) and turn the heat down to medium, mix it through and heat it through

Eating And Storage Tips

I don’t find soba noodles reheat that well and if you want to make enough of this for leftovers I would suggest you opting for something like a more standard egg noodle instead but even then be sure to add extra sauce in or a dash of water as blasting them in the microwave makes them super dry otherwise.

Whilst a chow mein sauce was my preference here you could easily use a variety of other sauces from a stores cupboard section. I had this one to use and am trying to shift away from packet mixes and instead make everything from scratch so wanted to use this one up as part of my lazy meal moods.

I add pork here put chicken or beef would work fantastically here. If you want to ditch the meat all together go for something like extra pepper and a bunch of chestnut and heartier mushrooms instead.
