Cottage Cheese Bites

Ingredients

  • Potato, Cubed For Boiling
  • Black Pepper, Salt, Chilli Flakes
  • Cottage Cheese

Method

  1. Boil the potato in lightly salted water until you can mash it up
  2. Add black pepper, salt and red chilli flakes to the mash before adding in the cottage cheese and giving it all a good mix
  3. Dollop the mixture onto some baking paper on a baking tray and into the oven at 200c for about 20 minutes
  4. Reform the mixture into balls and turn the heat up to 220c for another 15-20 minutes, turning half way through

Eating And Storage Tips

You can either eat these immediately when they are still hot or allow them to cool and pop them into a container in the fridge to have over the course of a couple of days.

When I first started making these I used instant mashed potato powder as you can control the moisture content a lot more and that stops you having to reform the mixture halfway through. However, I much prefer using my own mash done from an actual potato and being able to control all the seasoning in there a bit better. If you have leftover mashed potato then this recipe is a great way to use it up!

I opted for plain cottage cheese this time but you can absolutely go for one that has some flavours in already just consider what works well with potato and adjust your seasonings to match. An onion and chive one would work great for instance but a pineapple one I wouldn’t probably suggest (unless you know something about pineapple and potato that I don’t!).
