
Ingredients
- 3tbsp butter (pre melting)
- Milk, Semi-Skimmed
- One Egg
- Plain (All Purpose Flour)
- Salt
- Sugar
- Fillings such as sliced mushroom, sliced spring onion, grated cheese, sliced banana, peanut butter
Method
- Mix some melted butter, milk, an egg, plain (all purpose) flour, salt and sugar together in a bowl before placing it in the fridge. Do more sugar for sweet ones but even for the savoury one put a little bit in there
- Get your fillings ready such as any slicing, grating or pan frying anything like the mushrooms
- After about 15 minutes place a small amount of the mixture into a preheated frying pan and make sure it is a thin layer rotating the pan to spread it out well
- Flip it over when the bottom is cooked and it is looking stable enough for such an attempt and add the mix to the middle of it before folding it over and serving
- Repeat for any more crepes or fillings you intend to use
Eating And Storage Tips
As you can see I went for both a sweet and savoury crepe. The fillings that you can put inside a crepe are pretty incredible and I find them to be a lot more versatile than a pancake. I’ve seen people put smoked salmon and cream cheese in them, peanut butter with caramel and chocolate and some fresh nuts to give a Snickers like taste and even brie, walnuts and maple syrup so don’t be afraid to experiment!
If you have found yourself doing one a bit too thick don’t worry. This will just be more like what I would call an English Pancake (a lot of our pancakes, especially on Shrove Tuesday use something similar to a crepe batter recipe but are thicker but not thick enough to be a Scotch or American Pancake) but that just means it will hold the fillings better and you might want to load them up more to keep a bit of extra balance in ratios.
You can easily make this mix up one day and keep the rest in the fridge in a sealer container, if you have one a protein shake cup works amazingly as then you can pour it direct a lot easier, to use the next day. Making this a weekend and weekday friendly recipe!
