I made not one, not two but three meals using the same bolognese type beef mince mixture. I did this to show you can do meal prep to a certain degree without having to eat the exact same thing on repeat.
Meal One
For the first meal I took the more traditional route of putting it with some spaghetti.
I took this more obvious approach as mixing it fresh into hot cooked pasta when it has just been cooked really feels super homely and comforting. Especially because on reheating the meat mixture will usually lose some moisture so it’s harder to do it with pasta after that because it doesn’t have that liquid joy to coat it.
Also, it’s a great meal to throw a bit of leftover cheese on and just slurp away it without worrying about getting messy because you probably already have got messy from cooking.
Meal Two
I threw that mixture on some well done toast with a bit more cheese and some fresh basil as well. This was a day where I was absolutely exhausted and just wanted a nice comfy meal.
The well cooked toast texture really counteracts the softer substance of the meat mixture whilst the fresh basil provides and extra bit of flavour and revitalises it with a burst of flavour too.
Meal Three
The third meal is the most creative one for how to use those final bits of leftovers up. If I had leftover mashed potato this would have been an even faster and still scrumptious meal.
Instead, as I had no leftovers, I boiled up and mashed some potatoes and placed them onto a baking sheet and into the oven. I topped that with some grated cheese and then topped it with the beef mince mixture and back into the oven for a while to heat everything through, get the cheese melty and crisp up that potato a bit more too.
