Liven Up Chicken With Zaatar

Forget bland pan-fried chicken for your quick mid-week meal and instead give it some oomph in the most simple and speedy of ways.

Ingredients

  • Chicken Breast, Cubed
  • Onion, Diced
  • Red Pepper, Diced
  • Garlic Granules, Black Pepper, Zaatar
  • Rice And Avocado To Side Serve

Method

  1. Put the onion and red pepper into a frying pan with a dash of pre-heated oil and allow to start cooking (especially if using anything from frozen as I did as I had pre-prepared and frozen both of these)
  2. Add in the chicken and keep the heat high
  3. Add in black pepper, garlic granules and zaatar (I got my zaatar from Lidl). I add a smaller amount of zaatar here and more after giving it a good stir to make sure it all gets well coated
  4. Continue cooking, dropping the heat slightly, until the chicken is cooked before removing from the heat and serving with your sides of choice

Eating And Storage Tips

I find that these flavours and ingredients work well for having it cold another day. You can easily mix this through with some rice or pasta for lunch the following day.

It also works well reheated but if you are doing that, of course, make sure you heat it through the chicken thoroughly and consider adding in a splash of moisture too to stop it from drying out.

You could mix something else through here like courgette or aubergine chopped into small cubes and pan fried to get crispy a little too.

Another option is to do this with something like small cubes of roasted potato instead of rice. Whether you go for rice or potato you could always put it inside a lettuce wrap as well for extra crunch, an additional bit of greenery and to make it more portable.
