
Ingredients:
- 20g Chopped Onion
- 80g Diced bell pepper
- Two Cloves of garlic, finely chopped
- One Medium red chilli, finely chopped
- 75g Dried spaghetti
- Seven Baby tomatoes, sliced
- 100g Caramelised onion hummus
- Fresh basil
Method:
- Place the onion, bell pepper, garlic and chilli into a saute pan and start to cook
- Put spaghetti on to boil
- Drain some of the pasta water into the saute pan before draining the rest of the pasta
- Add the tomatoes and spaghetti to the saute pan
- Add the hummus to the pan and mix well
- Serve and top with basil

This recipe, using the amounts and specific items that I did, comes in at 540 calories. If you use whole pasta or reduced fat hummus you could trim a little bit off this.
if you just have some normal hummus leftover that’s not a problem at all. You just might want to consider adding additional herbs and spices in here, such as onion powder, garlic granules, paprika and of course black pepper.
You could tweak some of the vegetables in here to include small pieces of broccoli or mushroom. I prefer these ones as they cook down quickly and all at a similar temperature and rate but you can adjust things accordingly.
