Ingredients:

  • Tortilla (I used a seeded wholemeal one)
  • Cheese, grated
  • Bacon (I used cooking bacon because it’s so much cheaper)
  • Mushrooms, sliced
  • Spring onions, sliced

Method:

  1. Cook the bacon and mushrooms in a large frying pan and then set aside
  2. Place the tortilla in the pan and allow to warm through
  3. Add the cheese and other toppings
  4. Place a lid over this to keep the heat in and melt the cheese
  5. Once melted remove the lid and fold it over
  6. Cut in half to ease of eating or attempt to fold again
  7. Serve. I opted for putting mine with some avocado and side salad

Eating And Storage Tips

A lot of quesadillas have things like chicken and beans in. I am, however, allergic to beans and black beans are especially my enemy so if that’s more your vibe then go ahead and follow your dreams. Also, I had cooking bacon so I used that as my protein.

You can probably get away with using a lot of cheeses here as long as they melt quickly when you put a lid over it. You don’t want to end up with the tortilla burning from slow melting cheese. It is important to consider the oil or water content in the cheese you want though to make sure it doesn’t become an oil drippy mess when you go to eat it or that it doesn’t have so much moisture it manages to undo that hardened tortilla shell.

I don’t mind melted and gone cold cheese and if you’re like me then you could easily make this up in advance to take with you to work or so you have an extra one for lunch the following day. If I was doing this I might leave out the mushrooms as I’m not the biggest fan of cooked and cooled down those, but again, do what makes your heart and tummy sing.
