
Ingredients:
- Chicken thighs, boneless and skinless
- Tomato puree/paste
- Oil
- Black pepper, salt, cajun seasoning, onion granules
- Onion, diced
- Broccoli
- Rice
Method:
- Spread the chicken out into an oven friendly dish
- Put tomato paste/puree over the chicken
- Add the seasonings
- Put a dash of oil in and make sure each piece is thoroughly coated in everything
- Add some onion and broccoli to the dish
- Cook at 180c (or if your oven sucks like mine 190c) for 25-30 minutes
- Serve with some rice
Eating And Storage Tips
I made up an extra piece of chicken to put with some rice and salad for lunch the next day (I’m pondering doing a “my lunches for the week” series so you might see it in the future).
You could easily give this a bit more oomph by adding things like fresh garlic and chilli to this as well. Or you could give it an extra veggie boost by adding something like bell peppers as well or adding extra vegetables to the rice.
Once these are cooked you can pop them into the fridge for a couple of days and, if desired, reheat them thoroughly.
