
Ingredients:
- Boneless pork loin
- Plain flour
- Milk
- Breadcrumbs
- Salt and pepper
Method:
- Bash out the pork loin a little. If you have a rolling pin or a meat tenderiser feel free to use them. I just used my hand
- Coat the pork in flour before dunking it in some milk and removing back to the board
- Season your breadcrumbs and then cover the pork in them
- Place the pork into the airfryer, adding a little oil to each side, and cook at 170c for 25 minutes remembering to turn it halfway through
- Serve and enjoy
Eating And Storage Tips
You can make this up in advance and put it covered in the fridge until it’s time to cook. You can also cook it before you need it and put it back into the airfryer on a low heat to reheat it without drying it out or burning the breading.
You could even make this up and leave it to cool and have it in something like a sandwich for a lunch. This is perfect if you don’t like to do this sort of thing just for one portion or like to make dinners that you can have for lunch the following day.
I served mine with some noodles but you could easily take this down the mashed potato and side vegetables route too. I wanted something suitable for the weather the day I cooked it and wanted to spend as little time in the kitchen with active heat sources as possible!
I kept my seasonings pretty basic but depending on what you plan to serve yours with you can 100% add a lot more things into the breadcrumbs or even the flour and milk stages to give it a lot more depth of flavour.
