Banana Bread Muffins

Ingredients:

  • 100g sugar
  • 75g oil
  • 225g self-raising flour
  • Three ripe bananas
  • Optional: Peanut butter, honey, chocolate

Method:

  1. Put the oven on at 190c (375f) to preheat
  2. Place sugar, oil and bananas in a bowl and mix together well
  3. If you are using peanut butter add that into this mix
  4. Place this mix into the flour and incorporate everything well
  5. If you are adding honey, chocolate or anything else like dried fruit or nuts add that in here and give another good mix
  6. Divide the mixture into muffin cases and cover with foil
  7. Bake for 20 minutes and then remove the foil before baking for about another 15 minutes
  8. Do the “is my knife clean check” and then remove from the tray to cool a little. Once cooled more remove from the cases

Eating And Storage Tips

Want to see a different take on this? I’ve previously done a banana and apple bread loaf (warning I did this whilst in the US so it uses ‘the other’ measurement system).

I would usually add things like cinnamon, mixed spice or even ground ginger to a banana bread but my current spice selection hasn’t grown that far. If you want to add these in then add them to the flour before anything else.

Additionally, if you are using self-raising flour then adding baking powder is completely optional. I didn’t do it here but if you want more of a rise and perhaps a slightly lighter structure add in a couple of tablespoons to the flour (again before adding anything else).

Whilst I put honey in mine if you want more of a gooey sweet taste you could add in chocolate chips. Want more of a crunch? Add in actual chopped nuts.

Want to make it look fancy and have a forth banana? Chop some of this up and place it on the top of each of the muffins before baking.

When they have cooled I wrap them up using the foil that I used for covering the top whilst baking them and place them into an airtight container. I don’t usually put them in the fridge as I find they can go a bit hard doing so. You can however pop them into the freezer if you want to make a batch of these up and take one out each evening to have for breakfast the following day (popped into the microwave for a couple of seconds to liven it back up a bit).
