
Ingredients:
- Salt
- White sugar
- White wine vinegar
- Soy sauce
- Sesame oil
- Vegetables (cucumber, onion, carrots, whatever works for you)
Method:
- Place the vegetables, salt, sugar, white sine vinegar and soy sauce into a container and give it all a good shake
- Add in the sesame oil and repeat to shake well
- Place in the fridge for at least 30 minutes before serving and enjoying
Eating And Storage Tips
You can add extra seasonings to this. Perhaps even some finely chopped sliced of red chilli or changing the liquid ratios to add some other things in as well.
I actually used my liquid mixture twice. I used it for the really quick pickle for about 30 minutes and then I put some more cucumber and spring onion into the mixture to leave in the fridge overnight. Whilst this is a quick pickle it can easily be made up 24 hours in advance which makes it even better for being a ready to go snack.
If you want to get a bit more fancy, if you want to serve this as part of a dish, you could get a long cucumber or carrot and do it into ribbons and mix them together in here.
