
Ingredients:
Here’s what I used but of course use whatever leftover or old vegetables you have hanging around for this
- Garlic
- Red onion greens
- Carrots
- Mushrooms
- Vegetable stock cube
- Black pepper, mixed herbs
- Chicken bones (which still had the onions from when I cooked it)
Method:
- Put everything into the largest saucepan you own and add in a lot of water and cook on a medium heat for about an hour
- Drop this heat slightly and allow to simmer away for about another three hours
- Drain this all off
- Place all the bones etc back into the pan and repeat the process
- When this second set is drain I mix some of the stronger batch in there
- Allow to cool and store
Tips
More than you will need? Pop it into the freezer in batches of the amount you tend to use in one go.
If you have a decent size slow cooker you could do a larger batch of it all in one go in there. This is what I would do if my slow cooker wasn’t a me sized one.
You can of course add more seasonings to this but I keep mine simple so it has flavour but will remain versatile. There’s nothing worse than doing something in batches and being forced into a bit of a corner with it.
And this is the most important one. Take the drained bones etc straight outside to the appropriate garbage bin. This stuff will start to smell if you just leave it inside overnight.
