
Ingredients:
- Chicken
- Mixed herbs, black pepper, salt
- Fresh thyme
- Red onion
- Butter and margarine
Method:
- Place the chicken in a suitable oven dish
- Sprinkle some dried herbs and the salt on
- Place some butter and margarine around and in the chicken
- Put some fresh thyme and onion inside the chicken
- Add some more dried herbs and salt on top
- Place into a preheated 180c oven for an hour and 50 minutes
- Remove and allow to cool a little in the dish before placing onto a chopping board (I put some kitchen towel down so it doesn’t soak into my board as badly)
- Carve it all up!
Eating And Storage Tips
Fun fact: I actually got this chicken in an Aldi Too Good To Go bag (I tend to open these on TikTok, Instagram and YouTube) so it became an incredibly cheap grocery week for me. If you want to see the video of the cooking of this in process keep scrolling right to the bottom!
After I had carved everything up I had a large tupperware of chicken meat, one of bones to make some stock, a small one of chicken skin and another small one of the juices and fat from the dish it was cooked in. I’m keen on making the most of a something like this and will be sharing my stock making process soon.
If, like me, you live by yourself and fear about getting through such a vast amount of chicken before it goes slimy and bad then no need to fear. You can shred some of this up and pop it into the freezer to later defrost and pop into meals near the end of cooking. But you can also then make up double portions of other meals; perhaps a chicken curry, stew, soup or certain pasta dishes.
I used pretty basic seasonings for mine because of wanting to keep it versatile but if you will be using this in one or two meals then add a few extra seasonings on; Paprika, Cajun, ground coriander, the possibilities are endless depending on your plans for it going forward.
Meals Created
Given this produced a lot of meat and will result in a lot of meals I figured I would share with you below everything I do for it. If a recipe comes out for any of these I will add a link to them.

- A sourdough roll with brie, shredded chicken and chilli jam popped in the airfryer for a few minutes to let the brie melt and bread toast.
