
Ingredients:
- Beef meatballs
- Bell pepper, diced
- Spring onion, sliced
- Celery, sliced
- Small tomatoes, chopped
- Chopped tomatoes
- herbs and spices
- Pasta
Method:
- Put the pasta on to cook as per instructions but remove from heat and drain when it is about two minutes away from being fully cooked
- Place the meatballs, pepper, spring onion, celery and fresh tomatoes in a frying pan
- When the meatballs are browned on the outside and nearly cooked in the middle add the tin of chopped tomatoes and herbs and spices before leaving to simmer down for about 15 minutes
- Add in the drained pasta and cook for another couple of minutes before serving
Eating And Storage Tips
This meal can actually easily be frozen and defrosted and then have some cheese popped on top and a little water mixed in to go into the oven for reheating.
I also find that something like penne pasta stands up a bit better in a microwave reheating situation with a loose enough sauce like this one. If you are taking this approach though consider what vegetables you are throwing in to if they can stand up to the microwave to go with it.
When serving this up I was really tempted to add some cheese but because the meatballs were technically some “wagyu beef bon bons” from an Aldi too good to go bag I found them to have enough fat in there that any oil from cheese might have tipped the balance slightly. If you are making your own meatballs or getting some with a lower fat content adding some cheese in might add something as well as a little bit more of a salty flavour.
