


Ingredients:
- Pork sausages
- Spinach
- Onion
- Red bell pepper
- Courgette
- Carrots
- Asparagus
- Sweet potato
- Baby tomatoes
- Black pepper, garlic granules, cajun seasoning, salt
Method:
- Put the sweet potato into the airfryer at 190c for ten minutes
- After this add in the sausages and tomatoes for another ten minutes
- Meanwhile put the vegetable mixture in a pan on a high heat
- After the ten minutes move the sweet potato and tomatoes to the vegetable mixture pan and turn the heat to low
- Let the sausages finish cooking and browning up a little
- Serve and enjoy!
Eating And Storage Tips
Everything about this meal can be cooked in larger amounts and then split up for a couple of days meals. If you are planning on making extra you might want to take some of the vegetables out when they have a small amount of bite left and otherwise they will cook further on a reheating attempt.
I went for very basic seasonings but you could mix it up to be spicy, more herby or tweaked depending on what vegetables you are actually considering putting in it.
Originally I was planning to do this with cous cous but opted for some sweet potatoes instead as they feel a lot more nutritional and provide a delicious bit of contrast to some other things included in the dish.
