


Ingredients:
- Gnocchi
- Bacon (in my case bacon trimmings)
- Salad leaves
- Cherry tomatoes, halved
- Radishes, sliced
- White cheddar cheese, grated
- Soft cheese
- Black pepper, red chilli flakes, garlic granules
Method:
- Put the bacon in a pan on a medium to high heat
- Meanwhile mix the salad leaves, tomatoes and radishes
- Once the bacon is cooked add the gnocchi and let the outside start to crisp up
- When this has crisped up, turn the heat to low and add in the soft cheese and grated cheddar and mix well
- Serve alongside the side salad and enjoy
Eating And Storage Tips
This salad is certainly easy enough to make up and put into the fridge to have some the next day. I would avoid leaving it more than that just as opened and cut salad can lose its crisp and fresh feel pretty quickly.
The bacon gnocchi mixture itself can also be stored but remember that the cheeses and all the oils from that and the fat from the bacon will solidify in the fridge and you will certainly need to reheat it well in the microwave with a couple of stirs in the process. If you aren’t intending to have all the gnocchi and bacon at once I would suggest it is better to put that in a tub for the fridge before adding the cheeses and then adding the cheese during the reheating process when you do go to have it.
I did this with a side salad but you could easily put broccoli in it or on the side or something like asparagus on the side and before you know it you have a more warming meal for slightly colder days.
