Chicken Pasta Salad

For this delicious, nutritional and warm weather appropriate chicken salad here are the details!

Ingredients

  • One chicken breast, pan fried with black pepper, cayenne pepper and garlic seasoning
  • Pasta of your preference cooked in lightly salted water as per instructions
  • A bundle of salad. I used halved cherry tomatoes and sliced spring onions, celery and radishes as well as some preprepared bag of lettuce
  • Mayonnaise
  • Cottage cheese

Method

  1. Have your chicken and pasta cooking whilst you prepare all the salad and mix it into a large bowl
  2. Mix the mayonnaise, pasta and cottage cheese into the bowl
  3. Add the chicken in and give another good stir before serving up
  4. Enjoy!

Storage And Eating Tips

You can mix your seasonings up for your chicken incredibly easily and of course what salad you choose as well. if you happen to be fancy and have different flavoured mayonnaise going then knock yourself out (but I will never suggest salad cream).

This can very easily be split up, done in batches, and had as leftovers cold the next day perhaps packed for lunch. I would probably only suggest keeping it around for a couple of days though because of it including chicken and also the way fresh salad can turn pretty quickly.
