Sausage Mushroom Pasta

The thing about living alone is, unless you happen to live close to a butcher where you can buy sausages by the number you often find yourself with at least four or six but even more commonly eight, you end up with more sausages than for just one meal. So after doing some airfryered sausages and vegetables I pondered how else I could use them in a different way.

Ingredients (For One)

  • One serving of spaghetti
  • Two sausages, chopped (I used regular British style pork ones)
  • Asparagus tips, cut to inch long pieces
  • A large handful of sliced mushrooms
  • Pepper, salt, mixed herbs, garlic granules
  • Milk
  • Cream cheese

Method

  1. Heat a pan of salted boiling water up to cook the spaghetti as per packet instructions. Once it is al dente drain it and set aside.
  2. In a frying pan put the chopped sausages in and put the heat on high.
  3. After a couple of minutes add the mushrooms and asparagus tips.
  4. Drop the heat to a medium high and stir occasionally to let the sausages brown on the outside and continue to cook.
  5. Once they are cooked add seasonings in and give it a good stir before adding some cream cheese and milk. Whilst you will then be letting this continue to cook for five to ten minutes so it will reduce consider how ‘liquidy’ you want your sauce to be.
  6. Once it has reduced, allowing the herbs and spices to impact a little as well, mix in the spaghetti on a medium heat for a couple of minutes before serving.

Eating And Storage Tips

You can use a variety of different vegetables here. I went for regular mushrooms because it made me think about a stroganoff in a very diluted way but you could include other mushroom types. I also used asparagus because I had some leftover but something like chopped broccoli could work as well.

If you want to make extra of this for leftovers you might need to add a little more milk as you go to heat it up as something like this will harden up a little in the fridge especially when mixed with things like fat from the sausages.

Whilst I omitted it from my own dish you could incorporate or add a finishing touch of a variety of cheeses too it. A sprinkle of fresh parmesan or a nutty hard cheese could accompany the earthy flavours present here.
