It has been a while. I’ve needed a little bit of time to get my groove back and find desire to cook actual fully rounded meals. But recently I got some plates back from a past life and it give me that little kick to charge my camera batteries and come up with a bit of a food plan.

This still is not anything impressive but damn it felt good. I popped some music on, rearranged some things in my kitchen (I have this old little tea tray with wheels to put plates and pans in front of my radiator because cupboard space is limited), did the dishes and then prepped some food.
A little bit ago I did pull myself together enough to pop some gammon in the slowcooker so I stored the fat away for a rainy day. In that case the rainy day was today so I popped it into the airfryer to heat up.
Once it was all heated up I threw in some miniature potatoes and chopped up parsnips. Left it for a good 20 minutes, drained a lot of the fat away before adding in the sausages for 10 minutes and then adding in some asparagus tips, mushroom, chopped large tomatoes, sweet red pepper, beetroot and sliced blood pudding in for another 20 minutes before serving.

I love vegetables and find myself doing a little happy wiggle as I am eating them and airfrying them helps to bring added flavour as well as keeping them maintain a bit of a crunch and some vibrancy.
What is your favourite vegetable to airfryer and is there anything special that you add t it to give that extra something?
