

Ingredients (For One)
- Chicken Thighs
- Cajun Seasoning
- Potato, cubed
- Carrots, Finely cubed
- Savoy Cabbage
- Bacon, chopped
Method
- Pre-heat your oven to approximately 190c (if you have boneless thighs you can go 180c) with a roasting dish with some oil in to heat up simultaneously.
- Sprinkle a small amount of butter on the thigh skin and then sprinkle seasoning on top (to flavour hit preference).
- Place the chicken and the cubed potato and carrots in the roasting dish and into the oven giving it a little shake occasionally checking the chicken every ten minutes from thirty minutes of cooking to see how well it is cooked.
- Whilst that is cooking either pan fry or air fryer some chopped savoy cabbage with bacon, making sure to season to taste.
Eating And Storage Tips
The chicken makes for great leftovers and can be stored for a couple of days in a seal container in the fridge.
You could also cook something like this up and then break it up and mix it into something like pasta to stop it from feeling like you are repeating the same meal.
Doing something like this seasoning, there are of course a variety of pre-made ones out there, can also work for doing something like this on a bigger scale for a party or a barbeque.
