

Ingredients (For One)
- Leftover mashed potato (one small potato) that had butter and all those things mixed in
- Half a tin of small sweetcorn (approx 100g)
- Seasoning (salt, pepper, chilli flakes, paprika)
Method
- Mix the cold mashed potato, seasonings and corn together in a bowl
- Take a small ball, approximately 2-3 tbsp, of the mixture and then flatten them slightly into discs
- Pop in the airfryer on about 180c for 20 minutes
Eating And Storage Tips
If you want to add any extra things I would suggest a sprinkle of cheese, spring onions or finely chopped broccoli. You could also dip them into something like sweet chilli sauce or a BBQ sauce for a bit more flavour without restricting the flavour profile of the fritters themselves.
Given these are already made from leftovers I wouldn’t suggest keeping them around for a huge amount of time and you would certainly want them warmed up again (unless you like cold mashed potato?).
