Chicken In A Soup Sauce

Ingredients (For Four)

  • 1/2 Cup of milk
  • 1/2 Cup cream cheese
  • 2 Garlic cloves (finely chopped)
  • 1 Onion (finely diced)
  • Salt, pepper, onion powder
  • 2tbsp Sesame oil
  • 1 Tin Condensed cream of chicken soup
  • Chicken stock (enough to fill the tin of soup)
  • Four portions of uncooked chicken breast/tenders (cubed)

Method

  1. Fry the onion and garlic on a low setting in the sesame oil
  2. Add in the chicken, season well and turn up the heat to a medium-high and ensure it is cooked through
  3. Add the tin of soup, stock and milk. Mix together well and reduce the heat so it simmers
  4. Once heated add in the cream cheese and stir until it breaks down and “melts” into the sauce

Eating And Storage Tips

You can make this dish up in advance but if you plan to reheat it you might need to add a little more stock or milk at the time to loosen it back up or make sure that it doesn’t get too thick as you do so. It can safely be stored in the fridge for a couple of days but you probably would not want to eat it cold.

You can of course add many other ingredients to this recipe; Bacon, fresh or dried chilli and a sprinkling of cheese are all great ingredients to give this super basic meal an extra little pick me up.

Serving this with rice and a vegetable works well but you could also keep it more in a soup form and have a hearty bowl of it with some bread. It could also work well with pasta (mix it together and add some cheese to turn it into a baked delight).
